Packing lunches, more with less

Nicole Toia,

We know that life can sometimes feel like you’re a contestant in the amazing race! Running from school drop, to work, and on to after school activities means it can be hard to find time to prepare and pack healthy school lunches.

To help you get one step ahead, we have listed some of our favourite recipes that add a good variety to the lunch box in less time, and using only a few ingredients. These crowd pleasers will help you have the lunch box sorted in no time at all.

Time saving snacks to add to the lunchbox:

  • A whole piece of fruit or veg - save time on preparation and add a whole carrot or apple to the lunchbox.
  • Some cherry tomatoes or baby cucumbers -  these already come in perfect bite size portions, simply throw them straight into a container and go!
  • A slice of raisin bread - pull a slice straight from the freezer (you can even buy wholemeal varieties).
  • A tin of tuna or beans - high in protein these will keep your kids fuller for longer (remember to transfer to a container that is easy to open and add a fork).
  • Some wholegrain rice cakes -  a great snack either on their own or top with ricotta cheese or avocado.
