Classic Savoury Mince

Ingredients
- 1 onion, peeled and chopped
- 2 cloves garlic, peeled and chopped
- 500 g lean beef mince
- 1 stalk celery, finely diced
- 1/2 zucchini, grated
- 2 tbs no-added-salt tomato paste
- 2 tsp reduced-salt stock powder
- 1 cup water
- 1 1/2 cups frozen peas, carrots and corn
- to taste pepper
Variations
Can be gluten free (check stock cubes and serving suggestions).
Method
1. Heat oil in a large frypan or pot and cook onion and garlic on a medium heat for 2-3 mins, until softened.
2. Add the meat and cook till browned (about 8 minutes).
3. Add tomato paste and cook, stirring, for 1 minute.
4. Add celery and zucchini and cook till softened (about 3 minutes).
5. Add stock powder and water and cook for 5 minutes.
6. Add frozen vegetables and pepper and cook till all heated through.

Top mince with mash and a little grated cheese.
Pasta sauce
Add passata or tinned tomatoes and a pinch of sugar to mince and simmer for at least 10 minutes. Serve with pasta.
Toastie
Serve mince on toast with cheese.
Loaded potato
Serve mince on a cooked potato with a sprinkle of cheese, a dollop of Greek yoghurt, chives and parsley.
Freezing instructions: Freeze individual portions in an air-tight container or zip-lock bag.
