Breakfast Pita

Ingredients

  • 2 sprays olive or canola oil spray
  • pepper and salt
  • 2 eggs
  • 1 cup baby spinach leaves
  • 1 wholemeal pita bread

Method

1. Heat a frypan over medium-high heat.

2. Spray with oil and add the spinach. Cook for 30 seconds.

3. Add the eggs, season lightly with salt and pepper. Cook, stirring gently until cooked through.

4. Remove and spoon egg and spinach scramble into the pitas. Serve immediately or wrap in foil to eat on the go.
