Smiley toast

Ingredients
- 1 slice wholemeal or multigrain bread, toasted
- 1 egg
- 1 slice red capsicum
- 40 g low-fat cheese, grated
- 2 pieces zucchini
- 1 cherry tomatoes, halved
- 1 button mushroom, sliced
- 1 tsp oil or margarine
Method
1. Cook the toast.
2. To create the omelette, beat the egg in a small bowl until blended. Grease a non-stick pan with margarine or oil over a medium-high heat. Pour in the egg mixture and allow to cook on one side for 1 minute. Gently flip and cook for another minute or until cooked through.
3. Assemble the face using the toast and omelette as the face, grated cheese for the hair, sliced zucchini round for the ears, red capsicum for the mouth and mushroom slice for the nose.
