Mini veggie frittatas + snacks

Ingredients

  • 2 pumpkin, leek and feta mini frittatas, pre-prepared
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cucumber, diced
  • 80 g blueberries
  • 200 g low-fat natural or Greek yoghurt
  • 1 serve date and muesli slice, pre-prepared

Method

  1. Pre-prepare pumpkin, leek and feta mini frittatas, place 2 in container within lunchbox.
  2. Pre-prepare date and muesli slice, serve 1 slice.
  3. Place diced cucumber and chopped tomatoes in container.
  4. Place blueberries in container.
  5. Decant 200g of plain or Greek yoghurt into a smaller container.
  6. Pack lunchbox with frittatas, slice, cucumber, tomatoes, yoghurt and blueberries – don’t forget a spoon for the yoghurt.
